Omelet Sandwiches

A great heat-n-go breakfast sandwich. Freeze sandwiches individually, wrapped in plastic wrap and aluminum foil. To heat in oven, remove plastic wrap, and re-wrap in foil. Place in 350° oven for 20 minutes. To warm in microwave, remove plastic wrap and foil. Wrap in a paper towel. warm in microwave on medium heat for 2-3 minutes, checking after each minute.
INGREDIENTS:
1/2 cup chopped pepper (green, red or yellow)
1/2 cup chopped onion
1 tbl canola oil
6 eggs beaten with 1/4 cup milk
Salt and pepper to taste
1 cup shredded cheese (choose a cheese to compliment your veggies and/or meat)
1 cup chopped ham (or sausage or bacon or omitted)
8 English muffins, split and toasted
INSTRUCTIONS:
Preheat oven to 475°. Spray 9×9 pan with oil. Saute green pepper and onion in canola oil until tender. Whisk eggs, milk, salt and pepper until blended. Add green pepper and onion. Pour into prepared  pan sprayed with oil. Sprinkle cheese and ham on top of the eggs. Bake for 20 minutes or until set. Let cool 10 minutes. Cut into eight portions; place on English muffins.
