Shredded Beef Burritos

Ingredients:

leftover roast beef (adjust to your preferred ratio of beans to meat) 

1 can chili beans

1 can green chilies

shredded cheddar and/or Monterrey jack cheese

flour tortillas

canned enchilada sauce

other leftover ingredients to add or substitute: rice, Mexican bulgar, etc.

 

Mix all ingredients (except tortillas, enchilada sauce, and a portion of cheese).  Place 1/4 – 1/3 cup of mixture in each tortilla. Roll and place in a lightly greased casserole dish.  Cover all with enchilada sauce. Top with shredded cheese. Bake at 325 degrees till warm, about 20-30 minutes.
